I'm Völundur Völundarson, an Icelandic chef with over two decades of culinary exploration across the globe—running kitchens, penning cookbooks, and hosting cooking shows. My journey led me back to Iceland with my family, drawn by our shared love for nature and adventure. For years, I've pursued the essence of bold flavors, seeking simplicity amidst complexity. It's that elusive depth you achieve in cooking, building layers of taste from scratch.
Thus began my passion for the seaweed. My fascination deepened as I unraveled the diversity of seaweed in the pristine Arctic waters surrounding Iceland. Each variety possesses its own unique flavors and characteristics, adding layers of complexity to my creations.
I immersed myself in the intricate flavors of seaweed, exploring the nuances of each variety. Experimenting with ancient methods dating back to 1753, I began blending it with premium sea salt, sourced and crafted with the natural power of geothermal energy.
